In 2011 we had a hot summer and a harvest starting off dry. In the end we had some rain so that the left Syrah clusters started to get a noble botrytis. We watched them carefully and picked them at the right time to cellar a noble dessert wine. The manufacturing of the fruits in the winery took place in a very gentle way. The cool and slow fermentation lasted till August 2011. Fortunately we could preserve the fruit and spice flavours which make this wine one of a kind.
match to hot fruit puddings, spiced fruit desserts or a good strong cheese.
