TASTING NOTE FEBRUARY 2012
Translucent with a hint of pale straw. Sweet scented honey and baked fruit with a subtle hint of lime. Taste of caramel and honeyed fig with a hint of lime coming through at the finish.
In 2011 we had a hot summer and a harvest starting off dry. In the end we had some rain so that the left already dried out Riesling clusters started to get a noble botrytis. We watched them carefully and picked them at the right time to cellar a noble dessert wine. The manufacturing of the fruits in the winery took place in a very gentle way. The cool and slow fermentation lasted till August 2011. The result is wonderful full flavoured dessert wine.
