Rich and complex, the bouquet shows yeast, stone fruit, citrus and subtle nutty characters. It’s concentrated and beautifully textured with lovely acitidity, leading to a long expansive finish. Excellent focus and harmony. At its best: now to 2015. Limited availability.

The fruits are from a section nearby Masterton. For a sparkling wine we use only sane fruits and press them as whole bunches in a very gentle way. It is made like a champaign, second maceration on the bottle, hand shaked, left in the bottle on its yeast for 2 years, disgorged in October 2011. As bottle closure we have replaced the classical sparkling cork with a zork cork.
