TASTING NOTE FEBRUARY 2012
Pale brick red with subtle brown tint. Black forest fruit aromas, flavours of new season berries fresh and sweet with a nice bite of fruit acidity.
In 2011 we had a hot summer and a harvest starting off dry. In the end we had some rain so that the left Cabernet Sauvignon clusters started to get a noble botrytis. We watched them carefully and picked them at the right time to cellar a noble dessert wine. The manufacturing of the fruits in the winery took place in a very gentle way. After pressing the thick-skinned and dried out berries there was not much “juice” left. The cool and slow fermentation lasted till August 2011. The result is a luscious, full-concentrated and flavoured dessert wine.
