This Wine has undergone a secondary fermentation in the bottle being in extended contact with its yeast lees for over three years now, we batch disgorge this wine in small parcels.
Full bodied, full flavoured and full of interest. It is made entirely from Pinot Noir grapes, with minimal skin contact in order to make a ‘Blanc de Noirs’ (white wine from black grapes).
A hint of blush and apricot hues with a fine bead, Savoury nutty flavours lead into yeast influenced characters with toast and yellow stone fruit. Mouth filling and beautifully balanced.
